Was it just a couple of weeks ago that I declared my fear of yeast? I was kind of just kidding, of course. I actually work with yeast fairly often, but it’s definitely not an ingredient that is in my comfort zone. When it works the way it’s supposed to… properly bubbling when mixed with warm water, and giving rise to dough, then I’m completely okay with it! This recipe for soft yeast rolls is one of the easiest I’ve ever tried. The rolls truly do come out of the oven so pull-apart tender and soft.

They’re made in three round cake pans (you’ll end up with 27 rolls in the end). And they’re perfectly okay to make early in the day (or the day prior to serving). Just wrap the whole bunch in foil and warm them in the oven before serving. I wrapped one of these and froze it for later- I just kept it in one big round chunk, and I’ll pull it apart when I decide to defrost it. My guests had a tough time keeping their hands off of these rolls. Their pillowy soft texture is addicting!

Anyone having a million relatives staying out your house over the holidays? It’s tough to figure out meals when there are so many people running around, so it’s nice to be able to assemble ahead and serve. This is a make-ahead breakfast casserole recipe. You (or other willing people who are meandering around your kitchen) prepare this the night before and then refrigerate overnight. The first one up in the morning, pops it into the oven, and then breakfast for the whole house is ready in one hour.

Yes, it comes out of the oven looking as gorgeous as you see here. My friend Libbie has served this Kielbasa Bake at a few holiday cookie decorating brunch parties she’s hosted, and it’s always a big hit. She passed along the recipe to me (because I totally demanded it!)

Linzer Pinwheel Cookies

This recipe may very well be my favorite cookie recipe of the season. The cookie part has a lovely (light) lemon flavor, and the raspberry swirl is ever-present. The cookie turns out to be a crispy sort of cookie.

The recipe is another one from the book I’m currently obsessed with: The Ultimate Cookie Book by Better Homes and Gardens. There are so many classic, new and all-around delicious cookie recipes in this book (more than 500!) that I can hardly stand it! I have so many recipes bookmarked to make. The temptation to bake is great!

There are a few steps involved in making these, but it’s well worth the time spent. The dough needs to chill… then you roll it with the raspberry and chill some more… then cut and bake. It’s not that big of a deal, but you need to plan for it. Since my kiddo is rather enamored with raspberries, he was just as happy with these as I was. And I love that they’re going to add a splash of color to my holiday cookie platter.

The best thing about deciding that comfort food is going to be the star of your dinner table is that anything goes :) My usual choice for comfort food is PASTA. Pasta is a once-in-a-while treat for us. For the most part we avoid eating it a lot at home, saving the carb-loving splurge for dinners out instead. I almost never order mac and cheese at a restaurant for fear of coming home a couple pounds heavier, but for some reason it feels okay to make it at home.

Bacon Macaroni and Cheese Recipe

Last weekend called for comfort food. It was snowing lightly, and we were feeling like a good macaroni and cheese, comfort-food type dinner might warm us up just right. This version of mac and cheese sports a simple cheddar cheese sauce (though you can use any cheese you’d like), and a generous amount of broccoli florets and crispy bacon. It’s creamy and perfect. It’s pure comfort food indeed!

Why is this a recipe for chocolate lovers, you might be asking? Well, it’s not your typical, ho-hum brownie, that’s for sure. Two types of chocolate make up the base of the brownie. Chocolate Truffle Squares (I used Ghirardelli) are broken into pieces and added to the top of the warm pan of brownies to create a third chocolate element. The chocolate lovers in my house thought these were fantastic. I had to hide the bulk of them in the depths of my freezer to keep my boys from chowing down on all of them!

If I were a skinny little thing who never had to worry about expanding thighs or declining health due to my choice of food intake, I’d eat carbonara every single night for dinner. Yep, I love it that much. When I sit down in an Italian restaurant to browse the menu… I usually opt for the chicken piccata or the veal marsala, thinking that a higher protein option is somehow the better choice. But it’s the carbonara that I secretly have my eye on. Thankfully, my husband is a big fan of pasta carbonara too, so if he orders it then I get a tasting bonus! I love to make carbonara at home since I know there aren’t ridiculous amounts of fat being added to the mix. This recipe is just that- much lighter on the cream. But it’s still just as good!

I must admit that pretty much the best part of this much-loved pasta dish is the bacon. I love the sauce it’s tossed in, but the bacon tops it all off and turns it into a 5-star dinner. My family loved this recipe, so I’m going to dub it as “family-friendly” too. This recipe comes from a cookbook called, The Best 30-Minute Recipe (Cooks Illustrated). It’s a cookbook I reach for quite often when I’m looking for something new and easy-to-make for dinner.
