Smoked Trout Spread

This is yet another recipe I made on our New England vacation earlier this summer. Yes, I was a Crazy Cook while on vacation!! I couldn’t help it. I had a kitchen with a view of the ocean, and it was just so enjoyable to be in there cooking for my gang. This is another recipe I spotted in my current obsession: The Beach House Cookbook. It is SUCH a good recipe for serving to a hungry crowd, and I love that it’s really different than your usual 7-layer dip.

The first order of business for this recipe is locating smoked trout. I thought I’d have to call around and explore a lot before I found it, but the first market I called had it. Smoked trout can be found near where you’d find the smoked salmon in your regular market. In fact, it’s sold in the same sort of packet that smoked salmon is sold in. I’ll bet you have it at your market too and you’ve never noticed it before!

Whole Wheat Chocolate Chip Cookie Bars

I also shared WHOLE WHEAT CHOCOLATE CHIP COOKIE BARS, which I’m all-of-a-sudden craving again!! These are awesome- a healthy spin on the classic treat. The recipe was shared in celebration of the newly released cookbook, Eat Skinny, Be Skinny by Claire Gallum.


This is the coolest find of the summer >> My friend Bridget from the blog, Bake at 350– featured this on her blog. Her Dad is building this GIANT greenhouse made of vintage windows, doors and reclaimed wood. Isn’t it the coolest thing ever??? I totally want one of these built in my backyard. I just need someone handy enough to do it!!

Beach Cookbooks

When I was on vacation in Massachusetts this summer, I cooked from these first two cookbooks you see here. In fact, I was OBSESSED with these two cookbooks! They are summery and fun. Since I loved those so much, and since I happened to spot this other one on Amazon, I decided to order all three to keep in my cookbook collection. They’re on their way for delivery to my house!

  • THE BEACH HOUSE COOKBOOK by Barbara Scott-Goodman : More than 75 recipes for sensational meals for those spending a weekend at the coast or for whom the seaside is home. Recipes for appetizers, soups, sandwiches, main courses, salads, desserts, and cocktails feature farmstand fruits and vegetables, fresh fish and shellfish, and meats for the grill that celebrate summer’s bounty.
  • THE CAPE COD TABLE by Lora Brody : Longtime Cape dweller and author Lora Brody presents many beloved regional dishes in this book. Interspersed among the recipes are color photographs of luscious food and vivid scenery, transporting readers to this simple stretch of paradise with every turn of the page.

Jersey boys

I went to see the movie version of “Jersey Boys.” I’ve seen the broadway show, and loved that. But the movie… was just okay. If you’ve seen the stage version, you might not be as excited about the movie. Not as much energy, and slow in parts. it wasn’t bad… I did enjoy it, but it wasn’t totally amazing or anything.

Every summer on our beach vacation to Massachusetts, we eat lobster rolls like crazy (duh), but we always eat whole lobsters at least once. Sure, you can order lobster at a restaurant for a gazillion dollars, or you can find them on sale at a seaside market (or buy them cheaper on the docks as the fishermen come in!) Cooking them at home is a much more affordable option, and it’s super easy to do.

Yeah, here’s me getting wild and crazy with some live lobster. They rubber-band the pinchers so you’re totally safe from attack. I’ll admit that I used to be completely freaked out by the idea of cooking these things while they’re still alive. It’s freaky, and it seems kind of mean, right? Well, I’ve gotten to the point where I’ve done it so many times now that it doesn’t really bother me much anymore. You’ve gotta eat. And lobster is something that is (um… really good) to eat in my book.

But I’ve been expanding my horizons and trying new things. All of the cocktails I’ve been posting I’ve absolutely loved. And this one I’m sharing with you today was the best one ever!!

We hung out at a beach house this summer for a couple of weeks. You’ll be seeing a few “beach house-inspired” recipes in the weeks to come. This is one of them. Our dear beach house neighbor Sheila loaned me her copy of The Beach House Cookbook to use while I was on vacation, which I absolutely adore. So many great recipes in there. Of course, this recipe comes from that book.

I liken this recipe to a good sangria, sans the loads of fruit and made totally differently! It’s super easy to pull-together (it begins with store-bought limeade, which is paired with vodka, triple sec and cranberry juice), and it’s served in a pitcher.

Yes, you’re seeing Elvis on those glasses. Once upon a time, my husband was quite enamored with Elvis. We had a whole lot of memorabilia, he once participated in an Elvis impersonation contest (complete with costume), and yes… my whole family has been to Graceland! Over the years, his “Elvis Mania” has calmed a bit. But we did happen to hang onto these cocktail glasses. When I made this recipe, I asked my husband if he had any tall cocktail glasses. He brought me these. They were not exactly what I had in mind, but they actually worked perfectly for my Cherry Mojitos!

These mojitos begin with fresh mint leaves in the bottom of the glass. I like a lot of mint in my mojitos, and the fresher the better too!

A little rum, a little lime juice, and a little muddling to smash those all together. The “cherry juice” comes from mixing simple syrup and fresh cherries in the blender. Strain out the cherry pulp, and you’ve got a perfect, sweetened cherry juice for making mojitos!

I also shared a Rosé Sangria recipe from the completely gorgeous new cookbook shared below. The first time I ever had Rosé was in France. I had never really thought about drinking it before, but we were treated to a bottle at a fabulous luncheon in the French countryside. I’ve been hooked ever since. This sangria recipe uses a bottle of Rosé. It’s delicious and summery. I suggest you give it a try if you’re doing any summer entertaining!

Here’s a must-have cookbook for you: Vibrant Food by Kimberly Hasselbrink. The sangria recipe mentioned above came from this book. It’s just GORGEOUS. When I was a kid, my Dad used to take me and my childhood friend Karen to 7-11 for a slurpee every Saturday afternoon. It was our “reward” treat for helping him in the yard. Karen and I would climb into the back Dad’s convertible mustang (a car he had for a short time to enjoy the CA sunshine), and we’d cruise to get our slurpees, hair blowing in the wind. I always chose a mixture of cherry and cola. Those were some fun times.

Coconut Rum Limeade Slushie #recipe

This kind of slushie that I’m sharing today is the adult version of a slurpee. You sure can’t go to 7-11 and press a button to get an adult slurpee… though occasionally I’ve seen bars that dispense these sorts of drinks! It’s best to just make them at home. This one is so super easy to make- just 2 ingredients + ice and a lime wedge garnish.

This recipe makes a slushie cocktail for one. If you’d like to share, I suggest you double the recipe. You’ll want to double the recipe anyways since these are totally yummy and refreshing on a hot summer day. They do go down pretty easily, so drink them responsibly!

Red White and Blue Coffee Cake

Before I begin here, I must share that I made this cake for Memorial Day weekend when we went on a camping trip. I baked the cake, wrapped it well with plastic wrap, then hauled it with us to a campground where we set up tents and had to store all of our food in a bear locker (it’s a locked cabinet that the bears cannot get into). This cake was enjoyed the first morning we were there… the morning after trying to sleep peacefully in the tent all night while worrying if bears were lurking around us. We finally pulled ourselves out of bed, finagled some camp-stove coffee and pulled out the cake. Everyone was in awe of how great this cake tasted. It was tender and sweet and delicious. It wasn’t the sort of breakfast most people have on a camping trip, but it was happily welcomed by everyone!

Can you tell how tender it was inside? I think it’s one of those things (much like banana bread) where it’s actually better the day after it’s made. The flavors had a good 24 hours to ripen. Wrapping it tightly in plastic wrap was key to not drying it out. I used fresh raspberries and fresh blueberries to create the red, white and blue.

Pardon me for this freaky blue-tinted photo, but I was CAMPING in the shade of huge pine trees and did not have access to the light I have at home for taking food photos! Regardless, I hope you get the message loud and clear that this cake is worthy of baking and eating (and especially serving to guests). It’s an excellent, summery sort of coffee cake. Enjoy!
